What we eat when we travel, according to our hosts
Plov in Bishkek, stockfish in Reine and a very serious rice lesson in Hokkaido.

Plov in Bishkek, stockfish in Reine and a very serious rice lesson in Hokkaido. It started, as most of our stories do, with a plan that fell apart in the best possible way.
Leave room for the unplanned
The best moments on the road rarely happen on schedule. A cancelled ferry becomes a long lunch with a fisherman; a wrong turn becomes the viewpoint nobody posts about. We design our journeys with that in mind: fewer stops, longer stays and afternoons deliberately left empty.
“The map told us where the road ended. It didn’t tell us that’s where the good part begins.”
How to do it yourself
Pick one base for every three nights on the road
Book the first and last night, improvise the middle
Ask your host where they go on their day off
Carry a paper map — the signal will disappear
Wherever you go next, go a little slower than you think you should. The place will meet you halfway.
